This is a picture of some steamed noodles I had last night. You take a bundle out, dip it in some soupy sauce and enjoy a quick jolly chew before you wolf it down so you can repeat the steps as soon as possible. This is a new favourite dish for me. They’re kind of like Chinese rigatoni… very al dente but because the noodle is fresh (I don’t think you can buy a dry version to make at home).
Come to think of it, quite likely rigatoni was inspired by this Chinese original. Like spaghetti and comedian dell’arte masks.
